Gourmet Spicy & Creamy Peanut Butter Sandwich Recipe | Menguy’s

For 1 person :

2 thick slices of sandwich bread

2 tbsp Menguy’s Creamy Peanut Butter
-
1 shredded chicken breast
-
A handful of arugula (rocket) or baby spinach

1/2 ripe avocado
-
A handful of Menguy’s Spicy Peanuts (lightly crushed)

Optional: a squeeze of lime juice

Toast the bread slices in a toaster or pan until they are golden brown and crispy.
Generously spread Creamy Peanut Butter on one side of each slice. The heat from the toast will enhance the natural peanut aromas.
Layer the arugula (or spinach) first, then add the thinly sliced avocado and the shredded chicken.
Sprinkle the crushed Chili Peanuts over the top to add texture and heat. Add a squeeze of lime juice for a fresh, zesty note.
Close the sandwich and press down gently to allow the flavors and textures to meld together perfectly.
Cut the sandwich diagonally to reveal the heart of the sandwich and enjoy immediately.
For an even more indulgent "Grilled Cheese" style version, heat the assembled sandwich for one minute on each side in a pan with a knob of butter to slightly melt the peanut butter.
