Peanut Butter Energy Balls

150g Menguy’s 100% Peanut Butter
200g pitted dates (soak them in hot water for 10 minutes if they are dry)
2 tbsp unsweetened cocoa powder
50g rolled oats
2 tbsp shredded coconut + extra for coating (optional)
1 tbsp chia seeds
1 tbsp maple syrup or honey (optional)
1 pinch of salt
In a food processor, combine the dates, 100% peanut butter, cocoa powder, rolled oats, shredded coconut, chia seeds, and maple syrup.
Blend until a sticky dough forms. If the mixture is too dry, add a little water (1 tablespoon at a time).
Scoop out small portions of dough using a tablespoon and roll them between your hands to form bite-sized balls.
Optional: For a more indulgent coating, roll the energy balls in the extra shredded coconut.
Place the balls in the refrigerator for at least 30 minutes to firm up.
Storage Tip: Keep them in an airtight container in the refrigerator for up to 1 week, or in the freezer for longer storage.
