Stir-Fried Noodle & Chicken Bowl

For 1 person :
Chicken (breast/cutlet)
Chinese noodles (egg noodles)
Button mushrooms (fresh)
Green beans
Savory soy sauce (salted)
Garlic
Ginger (fresh)
Prepare the marinade. In a bowl, mix half of the soy sauce with the grated garlic and ginger. Season with salt and pepper, add a drizzle of olive oil, and stir. Add the chicken and leave to marinate in the fridge for at least 10 minutes.
In a pot of boiling salted water, add the green beans. Cook for 4 minutes, then add the noodles and continue cooking for another 4 minutes over medium heat. Once cooked, drain and keep warm.
Meanwhile, prepare the satay sauce. In a bowl, mix the peanut butter, the remaining soy sauce, and the rest of the grated garlic and ginger.
Wash and slice the mushrooms.
Heat a drizzle of olive oil in a pan over medium heat. Add the mushrooms and cook for 5 to 6 minutes.
Add the green beans, noodles, and satay sauce. Mix everything well and cook for an additional 1 to 2 minutes over high heat.
At the same time, heat a drizzle of olive oil in a second pan over medium heat. Add the chicken and its marinade. Sear for 4 to 5 minutes on each side, until fully cooked and beautifully golden brown.
Serve the stir-fried noodles in a bowl or plate and top with the chicken. Mix, adjust the seasoning to your taste, and enjoy. It’s ready!
